The restaurant Olivar offers different menus for lunch and dinner; naturally, its focus is Moroccan cuisine, but expect Berber and Middle Eastern influences in many dishes. There are even Mexican-inspired options, hardly a surprise when you know the Habitas brand began in Tulum.
Everything is delicious, but it is a relatively small list so you may begin to want something else if you stay more than a few nights. That said, the fresh and zingy fish tacos done tempura-style with mustard and burnt onion at lunch were so good I ordered them twice and could have easily eaten them again. Highlights at dinner include a comforting fish tagine and chicken kapsa with crispy garlic and tahini. There is just one house red and white wine, which seems surprising for a hotel of this calibre; cocktails including the Sunset (vodka hibiscus and rosemary agave syrup) are creative and moreish. Before each meal, expect a selection of terracotta bowls filled with thoughtful nibbles: local bread, nuts, olives, dates, dips, cheeses, wonderful fried things and more.
At breakfast, you can order juices and smoothies (try banana, soy milk, amlou, cacao and dates) before à la carte options including a tomato confit quiche, eggs with sauteed cauliflower and pickled onion, and sweet banana bread with coffee mousse.
